30 Day Smoothie Challenge

Hooray, spring is pretty much here and I’ve been a gluttonous grossy (real word) for about seven weeks now. I’ve been craving motivation to actually eat something good for me, but between losing my job and snowy weather, well, it hasn’t been easy.

The other day though, my yoga studio posted something on Facebook about a 30 day green smoothie challenge, which is just what I need. Nothing too drastic, but that little kick in the buns to get me doing better.

Side note, I was eating out while watching soccer this morning and ordered a dish with pork and eggs in it. Two bites in I physically gagged and had to push my food away. It’s a small change, but six months ago Rachel would have laughed and happily eaten all the pork on the plate. Go me!

This juice challenge isn’t meant to be a meal replacement plan unless you want it to be, which is why I’m drawn to it. Ease into being healthier and allow your body to detox naturally instead of the good ol’ binge and purge shock. Have a smoothie or two per day instead of a breakfast or lunch (or in tandem with for baby steps) and feel your body working less to digest.

I am really in love with this challenge because they actually send out shopping lists and recipes, plop in your email inbox. It was perfect this morning as I was rushing through the grocery. Many of the items were only available frozen and at the natural grocery, but it was worth the extra stop and search to grab some items I was proud of purchasing.

While I’m doing the juicing this month, I’m also going to get a little hard on myself and be an ardent vegan. That means no cheating! Sorry friends, but well only be going to restaurants who let me munch on veggies. It’s great though – April is still far enough from summer to have a weight impact and warm enough to make drinking juice seem like a bummer.

They also send you great tips on rotating veggies to avoid toxicity and how to keep a week’s worth of fruits from expiring. Let me know if you intend on joining and perhaps we can have a night in and I’ll make a yummy vegan dinner, accompanied with some juice, Colorado pals!

The shopping list makes enough for two green smoothies a day. If you wish to only make a single serving of green smoothie goodness each day, half the shopping list and also half the recipes. We encourage you to make the full batch though— this will help you share with friends and family and still make enough for an afternoon nutritious snack.

FRUITS
7-8 bananas
2 pears
1 avocado
1 pack of raspberries
2 clementines or mandarins
2 peaches, fresh or 16 oz frozen
1 bag of cherries, fresh or 16 oz frozen
1 mango, fresh or 16 oz frozen
1 pineapple, fresh or 16 oz frozen
1 bag of mixed berries, 16 oz frozen

VEGGIES
kale, fresh (1 bag, 10-16 oz)
spinach, fresh (1 bag, 10-16 oz)
1 baby bok choy
2 carrots with tops

OTHER
almond milk
water
chia seeds (optional)
goji berries (optional)

Please Note: A serving size is 2 cups. Each smoothie recipe below makes 4-5 cups, which is perfect for two people. If you have leftovers, share with a friend or store in the fridge for 1-3 days in an airtight container (like a cute mason jar with a lid). You can also half the recipe if you prefer to only make one serving at a time.

BEGINNER’S LUCK WITH TOPS
1 1/2 cups spinach
2 carrots, include leaf tops
2 cups water
1 banana
1 cup mango
1 cup pineapple, frozen

BERRY CHERRY JUBILEE
2 cups spinach, fresh
2 cups water
1 cup cherries, pitted
1 cup mixed berries, frozen
1 banana
1 tablespoon chia seeds to sprinkle on top

AVO-BANANA KALE
2 cups kale
2 cups water
3 bananas, frozen
1/4 avocado
1 tablespoon goji berries (optional topping)

PEACH-BERRY
1 baby bok choy, with stems
1 1/2 cups almond milk, unsweetened
1 cup raspberries, fresh
1 cup peaches, frozen
1 banana
2 tablespoon chia seeds (optional topping)

POWER GREEN SMOOTHIE
2 cups power greens, fresh (mix the greens you have: kale, spinach, bok choy)
2 cups almond milk
2 ripe pears
2 clementines, peeled
1 cup pineapple, frozen
1 banana
1 tablespoon avocado
